Tribute to Sherbrooke ! Inaugurated in November 2022, the new restaurant-bar of the Delta Hotel by Marriott Sherbrooke, Coape & Felton, pays tribute to two founders of the city of Sherbrooke with its new decor and menu. Indeed, Sir John Coape Sherbrooke was a former Governor-in-Chief of Canada! Sherbrooke also owes its name to it, baptized thus when it was still just a hamlet, before gradually becoming the beautiful city that we know today. “We wanted to highlight the history of the city of Sherbrooke by being a pioneer in the hotel industry since 1989” underlines Samuel, director of operations of the hotel. A unique friendly atmosphere. The atmosphere is festive, offering a pleasant mix of customers: whether they are those working on their computers, friends meeting for a late afternoon aperitif, hockey enthusiasts at the bar, or even those tasting a meal comfortably seated at a table.In order to describe Coape & Felton in a few words, Samuel chose the words “friendly”, “simple” while being “efficient and well done”.

Michel Lebacq, executive chef at Coape & Felton has been working with the team at the Delta Hotel by Marriott Sherbrooke for 6 years now. He loves revisiting comforting dishes by adding local or exotic touches.
As for cocktails and mocktails, our team and its mixologist create recipes using products from Quebec distilleries. Summer like winter, discover seasonal menus, during products availability.
